shortcut pork floss scallion buns

These shortcut pork floss scallion buns taste shockingly similar to the ones you get at Chinese bakeries, for a tiny fraction of the effort compared to baking from scratch! With just a handful of ingredients and 10 minutes, you too can enjoy these classic buns at home.

The secret to this shortcut is using store-bought Hawaiian rolls. They’re soft, lightly sweet, and serve as the perfect base for all of my shortcut Chinese bakery buns. Some of my most popular ones are the shortcut pineapple bun, cheesy sausage scallion buns, and shortcut cocktail buns.

What is pork floss?

Pork floss, a type of meat floss (yuk sung in Cantonese), is made from stewed pork that’s been cooked with soy sauce and sugar, pulled apart, dried in the oven, then mashed and cooked again until it gets its characteristic stringy, cotton-y texture.

The best way I can describe its taste and texture is if you took pork jerky and turned it into cotton candy. It’s savory, well-seasoned, and its dried cotton texture rehydrates a bit as you chew it. It might sound odd to anyone who hasn’t had it before, but we grew up eating it in our congee and with pastries!

How to make shortcut pork floss scallion buns in 5 easy steps:

Step 1: Mix together the mayo spread

Mix together Japanese mayo, sweetened condensed milk (this will add a subtle sweetness), chopped scallions, and optionally some garlic powder.

Step 2: Cut halfway slits into each roll

There’s no need to separate these into individual rolls. Keeping them together makes slicing these slits and the rest of the preparation more efficient.

Step 3: Spread the mayo mixture on the rolls

Evenly spread the mixture on top of the rolls. Make sure to get it into each slit as well. This will help the pork floss in the next step stick to the rolls easily.

Step 4: Top the rolls with pork floss, scallions, and sesame seeds

Make sure to get some pork floss into each slit as well.

Step 5: Bake at 350F for 5-7 mins

Put the assembled buns on a wire rack, then bake at 350F for 5-7 minutes, or until you see the pork floss on top get a little toasty. Enjoy!
