Chinese cold sesame noodles

When the weather starts to warm up, and I start to get lazy to cook, these Chinese cold sesame noodles are my favorite noodle dish to make! The savory and nutty sauce on the noodles paired with the crunchy cucumbers make for a texture and flavor combination that will make you put this recipe on repeat. The best part? They require very little cooking and come together in just 10 minutes!

Chinese Cold Sesame Noodles

A low effort, refreshing and hearty dish that comes together in just 10 minutes, these Chinese cold sesame noodles are the perfect dish for summer time!

Ingredients

  • 4ozChinese thin wheat noodlesdried or fresh

Sauce:

  • 1tbspChinese sesame paste
  • 1tbspnatural, unsalted peanut butter(or sub with more Chinese sesame paste)
  • 1clovegarlicminced or grated
  • 1tbspsoy sauce
  • 1/2tbspChinese black vinegar
  • 1/2tbspsugar
  • 1/2tbspchili oilor more to taste
  • 1tsptoasted sesame oil
  • 2-3tbsphot water
  • small pinch of saltoptional

Toppings:

  • Persian cucumbersliced
  • scallions
  • cilantrooptional
  • sesame seedsoptional
  • crushed peanutsoptional

Instructions

Cook the noodles

  • Cook the thin wheat noodles according to package directions. Fresh noodles usually only require 1-2 minutes, and dried noodles will usually require 5-7 minutes depending on their thickness.
    4 oz Chinese thin wheat noodles
  • Prepare an ice bath for the noodles and set aside.
  • While the noodles are cooking, prepare the sauce.

Prepare the sauce and garnishes

  • Mix all the sauce ingredients together, except for the hot water.
    1 tbsp Chinese sesame paste, 1 tbsp natural, unsalted peanut butter, 1 clove garlic, 1 tbsp soy sauce, 1/2 tbsp Chinese black vinegar, 1/2 tbsp sugar, 1/2 tbsp chili oil, 1 tsp toasted sesame oil, small pinch of salt
  • Gradually add the hot water 1 tbsp at a time until the sauce reaches a slightly runny consistency. Taste the sauce and adjust to your preference.
    2-3 tbsp hot water
  • Slice the cucumbers and scallions (if using).

  • Once the noodles are done boiling, drain them, then drop them into the ice bath for 1-2 minutes.
  • Drain well, then top the noodles with your sauce and garnishes. Enjoy!
